Chef K’s Fresh Mozzarella
- 4 tablespoons Extra Virgin Olive Oil
- 1/2 cup Tapioca Maltodextrin
- Olive Oil
- 1 bunch Basil leaves
- Salt and Pepper to taste
- 1/2 Grapes
- 2 tablespoons aged Balsamic Vinegar
- 1/2 pound fresh Mozzarella
- Smoked Almonds
ingredients4 tablespoons Extra Virgin Olive Oil
1/2 cup Tapioca Maltodextrin
Olive OilinstructionsTurn extra virgin olive oil into powder. Add 1/2 cup of tapioca maltodextrin to the olive oil and stir vigorously until it turns into powder. Set aside.
ingredients1 bunch Basil leaves
Salt and Pepper to tasteinstructionsHeat oil and fry basil leaves until crispy, dry on paper towels and season with salt. Set aside.
2 tablespoons aged Balsamic VinegarinstructionsPeel grapes, split in half and marinate in balsamic vinegar. Set aside.

Smoked AlmondsinstructionsCut mozzarella and add marinated grapes, using a microplane shred the almonds on top and top it off with the powdered olive oil and fried basil. Serve immediately.
